In Article: Braida Brachetto - Sweet little beauties for the hols season!

To pair with the recipe of 2-Star Michelin Chef Fabrice Vulin featured on page 28, I propose the absolutely delightful Brachetto d'Acqui from the fabled Piedmontese producers Braida.  This is perhaps one of Italy's best kept secret and unfortunately a little too often underestimated for it is a wonderful little wine! Made with Brachetto, an aromatic red grape, with the Charmat method, it is very slightly sparking and, as the fermentation was stopped at 5.5% ABV, the style is sweet. This 2013 is archetypical with lovely scents reminiscent of wild strawberries, raspberries, rose petals, with notes of cinnamon and nutmeg. The palate is fresh and lively with ever so gentle bubbles delicately refreshing the mouth after each sip. The sugar is so well supported by the acidity that it feels ethereal and vibrant all at once. Memerizing and a great pairing!
