After over 12 months on lees, the wine was disgorged and enhanced with a 100 ml dosage of Vidal Icewine. The burst of flavour from the Icewine, combined with the bright berry character of the Gamay Noir creates a unique style and finesse in this dry sparkling wine. In the glass, fine bubbles rise gently against a delicate pink backdrop. Clean, fresh scents of apricot, wild raspberry, melon and Rainier cherry give way to an up-front, creamy mouthfeel and elegant mousse with flavours of raspberry and white peach.
