The sake includes a little lee.
As this sake was aged in the fridge ( -5 degrees), the umami of sake was enhanced by aging.
芳醇で辛口の味わいを目指して醇辛と名づけた純米酒である醇辛を搾る時、槽(お酒を搾る機械)から搾られるお酒を直接1本づつびんにとり詰めました。滓も残り、マイナス5度の貯蔵中も瓶内発酵し熟成され旨味が増しています。
