| WINE MAKING : We use only grapes from our own vineyards, harvested by hand when natural sugar and acidity are in perfect balance. We use stainless steel tanks for wine making and large 50 hl vats as well as 300 l barrels for maturing our reserve wines. Natural settling. Slow wine making with as little intervention as possible. Our wines are aged on fine lees for a minimum of 10 months followed by at least 36 months in bottle in the cellars. We wait a further 8 months after disgorging before our wines are released for sale.
| FOOD MATCHING : Lovers of chardonnay and of Champagne will be delighted by the purity of this wine. Ideal to serve as a stylish aperitif and also an excellent match with a variety of seafood. The pale yellow colour with fecks of gold gives the fresh appearance typical of chardonnay. The nose too is fresh, with hints of menthol at frst, then notes of crème fraiche and almonds combine to delightful effect. After a moment or two to breathe the nose becomes more complex and intense with exotic fruits (pineapple) and a decided hint of toast. On the palate the attack is lively and sustained and this leads seamlessly on to a fresh mineral fnish that ends on a note of absolute purity. A solid, dense and straightforward wine.
